Show answer and explanation

Correct answer: (C) Higher retention of vitamins and minerals

Explanation

During parboiling, soaking and heating allow some water-soluble nutrients to move inward before milling. Gelatinization and subsequent drying also strengthen the grain. The intended benefit is higher retention of vitamins and minerals, C, rather than the claims about easier polishing or a soft faster-cooking kernel.
